Citrus
and Pepper Marinated Ahi Tuna Scented with Star Anise

Ingredients
1 pound - Ahi Tuna #1+
6 ounces - Salt
4 ounces - Sugar
2 ounces - Black Pepper, freshly cracked
2 ounces - Sambuca or other anise flavored liquor
1 each - Zest of Lime
1 each - Zest of Lemon
1 each - Zest of Orange
Preparation
Marinate the Ahi Tuna in the Sambuca for 15 minutes. Then
cover the Ahi Tuna with the above listed ingredients overnight.
After marinating overnight, the Ahi Tuna will release a lot
of liquid. Make sure to rinse off the salt mixture thoroughly.
Cold Smoke the Ahi Tuna for 10-15 minutes
Slice and serve with julienned carrots, zucchini and
celery.
