Aspic of Wild
Berries in Port Essence

Ingredients
3 cups - Water
3 cups - Port Wine
2 cups - Sugar
1 1/2 ounces - Gelatin
1 each - Apple
3 each - Cloves
1 pint - Wild Mixed Berries
Preparation

Combine water, port wine and sugar
and bring to a boil.

Add
in the gelatin and allow the mixture to come to room temperature.

Place the fruit in the mold and
fill the liquid 1/2 way up the fruit and allow to chill.

When the aspic has chilled, fill
the rest of the mold. This will allow the fruit to remain on the top when
it is turned out of the mold.
