Aspic of Wild Berries in Port Essence

Ingredients
3 cups Water
3 cups Port Wine
2 cups Sugar
1 1/2 ounces Gelatin
1 each Apple
3 each Cloves
1 pint Wild Mixed Berries

Preparation

  • Combine water, port wine and sugar and bring to a  boil

  • add in the gelatin and allow the mixture to come to room temperature

  • Place the fruit in the mold and fill the liquid 1/2 way up the fruit and allow to chill

  • When the aspic has chilled, fill the rest of the mold. This will allow the fruit to remain on the top when it is turned out of the mold.
